This healthy tart can be enjoyed for breakfast along side your favorite cup of coffee, tea, or even a plant based milk (here's lookin' at you, cinnamon cashew milk). • 1 1⁄4 Cup Raw Almonds
• 3/4 Cup Walnuts
• 1⁄4 Cup Shredded Unsweetened Coconut
• 1 1⁄2 Cup Pitted Medjool Dates
• 1 1⁄2 Tbsp Coconut Oil
• 1 tsp MRM Raw Organic Lucuma Superfood Powder
LUCUMA CREAM FILLING:
• 3/4 Cup Raw Cashews, Soaked 4-5 Hours
• 1⁄4 Cup Unsweetened Almond Milk
• 1⁄2 tsp Cinnamon
• 2 Tbsp Maple Syrup
• 1 tsp Vanilla Extract
• Pinch Himalayan Sea Salt
• 2 tsp MRM Organic Raw Lucuma Superfood Powder
Line a small (5-6") spring form pan with parchment paper.
Pour all crust ingredients into a food processor. Process until small, crumbly, and uniform in size. The mixture should hold when pressed together.
Press the crust into the bottom of the spring form pan and up the sides, about an inch in height.
Put the crust in the freezer to set while you make the filling.
Drain the soaked cashews and give them a good rinse. Pour them into the food processor and blend until creamy. You may have to use a spatula to scrape down the sides a few times.
Add the rest of the cream filling ingredients to the cashew puree and blend on high until fully combined and smooth as possible. This can take about 5-10 minutes, be patient and scrape the sides down occasionally.
Pour the filling into the crust and place back in the freezer to set for 1-2 hours.
Once set, decorate with your toppings (optional)*. Add the finishing touch by sprinkling some Lucuma Powder and Cinnamon on top of the pie.

*TO MAKE THE APPLE ROSE**OPTIONAL*
Pre-heat the oven to about 300F
Cut your apple in half and remove the core leaving as much of the apple left as possible.
Very slowly, and with a very sharp knife, slice the apple very thinly- until they're almost transparent!
Place thin apple slices on a baking sheet lined baking tray. Bake for about 2-3 minutes, just until warm. Warming the apple slices makes the pliable to roll and curve so you can get that beautiful rose look.
Take a warmed slice of apple and curl it as much as possible, being very gentle and careful not to break it.
Place this first curled slice where eve you would like the center of your rose to be. Hold the center "petal" in place on the tart with one hand while you grab another slice of apple to wrap around it.
Continue this until you have covered your pie with apple petals or until you have reached your desired rose size.
