Apple Rose Lucuma Tart

This healthy tart can be enjoyed for breakfast along side your favorite cup of coffee, tea, or even a plant based milk (here's lookin' at you, cinnamon cashew milk). MRM Raw Organic Lucuma Fruit Superfood Powder has various antioxidants, vitamins, and minerals to keep you nourished while lending a great dash of flavor. This creamy, delicate tart is light and fluffy, has a flavor reminiscent of caramel, and can be enjoyed alone or with friends and family.

Ingredients

 

CRUST:
• 1 1⁄4 Cup Raw Almonds
• 3/4 Cup Walnuts
• 1⁄4 Cup Shredded Unsweetened Coconut
• 1 1⁄2 Cup Pitted Medjool Dates
• 1 1⁄2 Tbsp Coconut Oil
• 1 tsp MRM Raw Organic Lucuma Superfood Powder

LUCUMA CREAM FILLING:
• 3/4 Cup Raw Cashews, Soaked 4-5 Hours
• 1⁄4 Cup Unsweetened Almond Milk
• 1⁄2 tsp Cinnamon
• 2 Tbsp Maple Syrup
• 1 tsp Vanilla Extract
• Pinch Himalayan Sea Salt
• 2 tsp MRM Organic Raw Lucuma Superfood Powder

TOPPING:
• CrushedWalnuts
• Shredded Unsweetened Coconut • Lucuma Powder
• Cinnamon
• 2 Apples

Directions

  1. Line a small (5-6") spring form pan with parchment paper.
  2. Pour all crust ingredients into a food processor. Process until small, crumbly, and uniform in size. The mixture should hold when pressed together.
  3. Press the crust into the bottom of the spring form pan and up the sides, about an inch in height.
  4. Put the crust in the freezer to set while you make the filling.
  5. Drain the soaked cashews and give them a good rinse. Pour them into the food processor and blend until creamy. You may have to use a spatula to scrape down the sides a few times.
  6. Add the rest of the cream filling ingredients to the cashew puree and blend on high until fully combined and smooth as possible. This can take about 5-10 minutes, be patient and scrape the sides down occasionally.
  7. Pour the filling into the crust and place back in the freezer to set for 1-2 hours.
  8. Once set, decorate with your toppings (optional). Add the finishing touch by sprinkling some Lucuma Powder and Cinnamon on top of the pie.
  9. Cut, serve, and enjoy!
