Banana and Chocolate Fiber Muffins

Freshly baked muffins have to be one of the most cozy and convenient ways to enjoy breakfast, the only problem is that they're usually made with a bunch of not so great for you ingredients.... but you know us, we'll find a way to turn any traditional treat into something you can enjoy with no guilt attached! In this recipe for banana and chocolate fiber muffins we use our Whole Food Oragnic Fiber to help keep you fuller longer while minimizing total calories consumed. Fiber is great in aiding appetite control, weight management, supporting blood sugar balance, and promoting regularity.

Ingredients

  • 1 Cup whole wheat flour
  • 1/2 Cup all purpose flour
  • 1/4 Cup MRM Whole Food Organic Fiber Powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 Cup mashed ripe bananas (about 2)
  • 1 egg, lightly beaten
  • 1/2 Cup coconut sugar
  • 1/4 Cup vegetable oil
  • 1/4 Cup low fat milk
  • 1 tsp vanilla

Directions

  1. Preheat oven to 375°F. Spray a muffin pan with nonstick cooking spray or line with paper or silicone liners.
  2. In a large bowl, combine whole wheat and all purpose flours, MRM Fiber, baking powder, baking soda, nutmeg and salt.
  3. In medium bowl stir the mashed bananas with the beaten egg, 1/2 cup coconut sugar, oil, milk, and vanilla. Continue to stir banana mixture into dry mixture just until flour is moistened- be careful not to overmix.
  4. Divide batter among 9 muffin cups.
  5. Bake 12 - 15 minutes or until a toothpick inserted in centre comes out clean. Remove the muffins and let cool on wire rack.
  6. Enjoy!
