Baobab Crusted Cod with Roasted Mediterranean Vegetables

This dish is extremely refreshing and light, but still able to fill you up and keep you satiated. The superfood baobab powder brings a bright citrus flavor to compliment the fresh cod and roasted seasoned vegetables. Baobab also brings fiber and Vitamin C into play, thanks to it being an amazingly super superfood and all!


  • 1/2 lb of fresh cod fillet (skinned and trimmed)
  • 1 bell pepper ( de seeded and roughly chopped)
  • 1 Courgette (Sliced into 1/2” rounds)
  • 1 eggplant (roughly chopped)
  • 1 red onion (peeled and roughly chopped)
  • 1 garlic bulb
  • 1 lemon half
  • arugula to garnish
  • Olive oil
  • Sea salt
  • For The Crust:
  • 1/2 cup of breadcrumbs
  • 1/4 stick of melted butted
  • 2 TBSP MRM Organic Baobab Powder
  • Sea salt to taste


  1. For the crust, mix all ingredients together and set aside.
  2. Pre heat the oven to 350F.
  3. Place all the prepared vegetables and garlic in a roasting tray, drizzle with olive oil and roast for 10 - 12 minutes.
  4. Remove from the oven and make some space in the middle (assort the veg around the outside of the try) to place the fish. Place the fish in the roasting dish, season with a pinch of sea salt and top with the baobab crust. Add the lemon half and return to the oven.
  5. Roast for 8-10 minutes.
  6. Remove from the oven and garnish with arugula, a drizzle of olive oil, and enjoy.
