These fish tacos are incredibly light and delicious. The citrus flavor from the lemon and MRM Baobab Superfood powder really highlight the natural flavor of the fish while complimenting the tangy flavors from all of the garnishes. FOR THE TACOS:
1⁄2 Lb Fresh Snapper (de-boned fillet and sliced into 3 pieces lengthways)
1 Carrot (peeled and grated)
1⁄4 Head White Cabbage (Finely sliced)
3 Soft Tortillas (your desired preference)
1 Tbsp MRM Raw Organic Baobab Fruit Superfood Powder • Avocado, for garnishFOR THE DRESSING:
1 Tomato (deseeded and diced)
2 Tbsp Capers
6 Mini Pickles, AKA Cornichons (finely chopped)
1⁄4 Cup Chopped Cilantro
1 tsp MRM Organic Superfood Baobab Fruit Superfood Powder
3 Tbsp Frazier Farms Extra Virgin Olive Oil
The Zest From 1 Lemon, and The Juice Of Half
Pinch Sea Salt
Prep the ingredients for the dressing and mix everything in a bowl and set aside.
Have the grated carrot, cabbage, preferred tortillas, and dressing aside ready to serve and garnish.
Heat a non-stick pan to a high heat with a splash of Frazier Farms Extra Virgin Olive Oil.
Pat the fish dry with kitchen paper towels and season with a pinch of sea salt.
Being careful, lay the fish in the hot pan and cook for 2 minutes on each side for a nice golden color. Sprinkle with baobab powder and cook for another 1 minute on each side.
