Baobab Zucchini & Carrot Fritters

  • 1 1/2 Cup Carrot, grated
  • 1 1/2 C Zucchini, grated
  • 1 Egg, beaten
  • 2 Tbsp All-Purpose Flour, or preferred alternative
  • 1/2 Lime, juice and zest
  • 1 Tbsp Parsley, chopped
  • 1 Tbsp Organic Baobab powder 


  1. Place the grated carrot and zucchini in a clean kitchen cloth and squeeze the excess moisture out of the veggies.
  2. Transfer the grated veggies into a bowl and add all remaining ingredients with a pinch of salt and pepper. Mix thoroughly. 
  3. Heat a cast iron skillet to high heat and brush with olive oil, then lower the heat to medium. 
  4. Use a metal ring or cookie cutter to mold 1 patty directly into the pan, then remove ring and repeat process. Or use your hands to make the patties.
  5. Cook for 2-3 minutes on either side and remove from the pan. 
  6. Enjoy!
