Beans and Green Power Bowl

When we think of healthy foods, what usually comes to mind? Most of us think of plant-based foods like veggies, fruit, and beans, right? Well, this power bowl contains all of those (and more!) Full of protein and healthy carbs to help refuel the muscles after a great workout, this “Buddha bowl” will energize your body without feeling weighed down by high fat animal products. It also makes a great lunch-box meal for when you’re on the go!


For the Sweet  & Spicy Bean Salsa:

  • ½ cup black beans
  • ½ fresh mango, diced
  • handful cherry tomatoes, cut into quarters
  • ½ tsp MRM Raw Organic Mesquite powder
  • ¼ tsp paprika
  • ¼ tsp cinnamon

For the Power Bowl:

  • Handful of mixed greens
  • 1 small Japanese sweet potato (purple skin with white flesh)
  • 1 cup fresh or frozen broccoli
  • ½ red bell pepper, chopped

To Serve:

  • fresh cilantro
  • sriracha hot sauce


  • To make the salsa, combine all ingredients into a bowl and mix well until evenly coated with spices.
  • Cook your sweet potato however you wish – steam for 15-20 minutes, bake in the oven on 400F for 30 minutes, or microwave on 50% power for 6-8 minutes.
  • Steam broccoli for about 15 minutes until al dente.
  • Assemble the Power Bowl:
    • Add a layer of mixed greens to the bottom.
    • Add the sweet potato, broccoli, red pepper, and Bean Salsa.
    • Top with fresh cilantro and a dash of sriracha for a little kick!
