Buckwheat Baobab Granola
Granola is a convenient option for those who need something quick and healthy for breakfast or a snack. However, some people cannot tolerate even gluten free oats, so this granola is made from buckwheat! Buckwheat is a healthy gluten free grain option with a delicious nutty flavor that is intensified after toasting. Add this granola to smoothies, porridge, banana ice cream, or eat it on it’s own with fruit and milk!
Preheat oven to 350F.
Add the buckwheat to a large baking tray and toast in the oven for 10 minutes until slightly browned.
Stir occasionally so it doesn’t burn and remove from the oven.
Add the medjool dates, coconut, buckwheat and baobab to a food processor.
Process until the dates break apart and the granola begins to stick together in chunks.
Store refrigerated for 1 week.
