Chicken Salad With Peach And Lucuma Dressing

Enjoy this refreshing chicken salad that we paired with fresh peaches and our Superfood Lucuma Powder. The Lucuma lends a nutty, caramel type flavor to the seared peaches and chicken that enhances each of their natural flavors and helps to bring the flavor profile of the dish together. Lucuma has various antioxidants, vitamins, and minerals to keep you nourished while lending a tasty dash of flavor, enjoy!

Ingredients

  • 2 Chicken Breasts, Rubbed with 1 Tbsp MRM Lucuma Powder
  • Handful of Green Beans (Boiled in water, then blanched for 90 seconds)
  • Handful of Chard Leaves (Roughly teared)
  • 1/2 Head of Romaine Lettuce (Roughly teared)
  • 2 Heirloom Tomatoes (sliced)
  • 2 Peaches
  • 1 Bunch Scallions (Chopped)
  • 1 Carrot (Grated)
  • Olive Oil
  • Salt and Pepper
  • 1/2 Cup Water

Directions

  1. Chop sides off of one peach and grill until you get nice char marks, place to the side for when you assemble the salad.
  2. Roughly chop the second peach and place the pieces into a small pot with water, boil for about one minute then remove from heat.
  3. Add the white wine vinegar, olive oil, and lucuma powder to the pot and whisk until combined. Taste and add a pinch of salt and/or pepper if you so desire. Place dressing off to the side.
  4. Grill the lucuma rubbed chicken for eight minutes on each side, be sure to check that the chicken is fully cooked before removing from the grill.
  5. Chop all remaining salad ingredients and toss together in a bowl with the dressing. Top the salad with the grilled chicken and grilled peaches. Enjoy!
