Chickpea, Cilantro, and Moringa Pesto Veggie Burgers
Pesto veggie burgers? Enough said! Moringa is jam-packed with vitamins and minerals to keep you healthy and happy. The flavor of the burgers are going to rock your world, and add on top of the delicious flavor the fact that you're eating something healthy that you don't need to feel guilty about? SCORE!
For the Patties: 1 ½ cups cooked chickpeas (drained and rinsed)
1 tablespoon tahini
¼ teaspoon minced garlic
¼ cup red onion (finely diced)
½ cup chopped cilantro leaves
¼ cup chopped walnuts
½ tsp ground cumin
Juice of 1 small lemon
MRM Organic Moringa Powder Sea salt and freshly ground black pepper
For the Pesto: 4 Cups Basil (thoroughly rinsed)
2 Cloves Garlic
1/2 Cup Olive Oil
1/4 Cup Pine Nuts
1/4 Cup Nutritional Yeast
3 Tbsp Lemon Juice
MRM Raw Organic Moringa Powder Salt and Pepper to Taste
In a small pan, gently cook the red onion in a splash of olive oil for 2-3 minutes, add the cumin and continue to cook for another 2 minutes. Allow to cool.
Place all remaining ingredients in a food processor and quickly blend to mash all the ingredients together then add the cumin and onion mix.
Mould into burger patties and place oil the fridge to chill.
Pour all pesto ingredients into a blender or food processor.
Process until combined to desired consistency and set aside ready to serve with burgers.
Heat a pan to high heat with a splash of light olive oil, gently dust the patties in flour and pan fry until golden on both sides.
Serve with your favourite burger buns, fillings and of course the delicious pesto and, enjoy.
