Chocolate Mocha Protein Pancakes
Pancakes this good should be a sin! This stack will fill you up and keep you energized because it is made up of plant based protein and superfoods. There is about 35g of protein in this tower of deliciousness. The Sacha Inchi's roasted, nutty flavor pairs well with the chocolate protein powder. Once you add the sweet cinnamon caramelized bananas you will have a smile on your face that will last all day!

Ingredients

  • 1 Cup Pancake Mix
  • 1 ½ Cups Unsweetened Almond Milk
  • 1 Scoop MRM Veggie Elite Chocolate Mocha Protein
  • ½ Tbsp MRM Maca Root Powder
  • 1 Tsp Vanilla Extract
  • 1 Tsp Cinnamon
  • 2 Bananas (cut in half length wise)
  • 2 Tsp Coconut Oil
  • Peanut Butter (optional)

Directions

1) In a mixing bowl add pancake mix, protein powder, Maca powder, almond milk, and vanilla extract. Using a whisk, mix well. 2) Heat a large skillet on medium heat and spray with nonstick spray. Once the pan is hot add about ¼ cup of mix for each pancake. When you start to see some bubbles, flip to the other side. 3) While the pancakes are cooking, heat up a medium size pan on medium-low heat. Add coconut oil and cinnamon. Mix it around then add your bananas face down. Cook for about a minute on each side until they start to caramelize. 4) Add pancakes to a plate and top with bananas, syrup, and peanut butter.
