These chocolate, peanut butter, and banana fiber bars are perfect for on-the-go snacks! You can easily whip up a batch and eat a bar in the morning for breakfast, or have it as a snack later on. Pre heat the oven to 350F. Line an 8” x 8” baking dish with parchment paper.
Roughly blend the oats, fiber, flax seeds, cinnamon, sugar, vanilla whey and salt together.
Mash the bananas with the honey, vanilla extract, chocolate chips and half of the peanut butter (leave the rest for topping) with a fork. Combine the banana mix with the dry mix until just combined be- careful not to overmix. Pour batter into the prepared baking dish and smooth out until nice and even.
Transfer to the oven and bake for 10-12 minutes.
Remove and set in the freezer for 30 minutes.
Top with the remaining peanut butter, slice into 10 bars, and enjoy!
