Chocolate Protein Pizookie with Matcha Ice Cream

Pizookie for all! This recipe is great when you just can't deny yourself something delicious, but of course, we added some protein and superfood to bring the "guilty level" way, way down! Share it, or don't either way, this is a show stopper! The protein will help keep you full, the maca will help increase energy and focus, and the matcha will boost alertness and your metabolism!

Ingredients

Pizookie:

  • 1 Scoop MRM Chocolate Mocha Veggie Elite
  • 1 Cup butter
  • 2 Cups coconut sugar
  • 2 Tbsp vanilla extract
  • 2 Eggs
  • 1 ½ Cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp kosher salt
  • ½ tsp baking soda
  • 1 Cup semi-sweet chocolate chips

    Matcha Ice Cream:

  • 1 Can full-fat coconut milk, unsweetened
  • 1 Cup unsweetened vanilla almond milk
  • 2 Tbsp MRM Matcha Green Tea powder
  • 1 Small ripe avocado
  • 1 tsp locust bean gum
  • ¼ Cup Medjool dates (pitted)
  • ¼ Cup maple syrup or honey

Directions

Pizookie:
  1. Preheat the oven to 350°F.
  2. Using a mixer, combine the butter and sugar together until fully incorporated and fluffy, about two minutes.
  3. Add the eggs to the slow-beating sugar and butter mixture and continue mixing until fully combined.
  4. Add the salt, baking powder, vanilla, baking soda, flour, and veggie elite protein powder to the bowl and beat for 1 minute to fully combine.
  5. Slowly fold the chocolate chips into the mixture.
  6. Spray your cast iron skillet with spray grease. Place the dough mix in the skillet and transfer to the oven. Bake for 12 -15 minutes initially. For a little more cooked, cook for about 16-17 minutes or until a knife pierced in the center comes out clean.
  7. Eat straight from the skillet, or serve with homemade ice cream! We served ours with homemade matcha ice cream, raspberries, and chocolate covered espresso beans. Enjoy! Matcha Ice Cream:
  8. Add coconut milk, almond milk, matcha powder, the flesh of the avocado, dates, and maple syrup to a blender and mix until you have a nice, smooth consistency. Add the locust bean gum and mix once more. Taste and adjust the flavor if you need to add more dates, honey, or matcha.
  9. Pour the contents into a freezer safe container with a lid and place in the freezer for a few hours, or overnight.
  10. If you freeze it overnight leave it out for 30-45 minutes to soften before serving.
  11. Serve by itself or add your favorite toppings such as chocolate, nuts, or fruit.
  12. Enjoy!
