20 Dried Balck Mission Figs
2 Tbsp MRM Raw Organic Maca Root Superfood Powder
4 Medjool Dates
1/2 Cup Vegan/Gluten Free Chocolate Chips (we used Enjoy Life brand)
De-Stem and chop all figs in half. Pit and chop all dates in half.
Pour all filling ingredients into the food processor and process until completely combined. The mixture should hold when pressed together.
Roll roughly 2 tsp worth of the filling in your palms to make a truffle filling ball. Place on a parchment paper lined cookie sheet. Continue with the rest of the filling until there is none left.
Place the filling balls in the freezer to set while you make the ganache chocolate coating.
In a hot water bath or double boiler melt the chocolate chips and coconut oil together, stirring occasionally, until fully melted and combined.
Add the MRM Raw Organic Maca Root Superfood Powder to the chocolate mixture and stir.
Remove the chocolate from heat, add in vanilla extract then pour in the almond milk while while stirring the chocolate and mix until smooth and combined.
Using a fork, drop a filling into the chocolate until completely covered. Remove from the chocolate and tap off excess chocolate before transferring back to the parchment paper. Continue until all balls are covered in chocolate. Place in the freezer to set for 15-20 minutes.
