Lemon Poppyseed Protein Bites
In hopes of keeping the last bit of fresh, fruity summer flavors around as we head into the autumn season, I made vegan, gluten free, and grain free protein bites that taste just like a Lemon Poppy Seed muffin, but are much better for you!

Ingredients

 

  • 2 scoops MRM Vanilla Bean Veggie Elite Protein Powder
  • 2 tbsp coconut flour
  • 2 tsp poppy seeds
  • 1/2 tbsp erythritol (or granulated sweetener of choice)
  • 2 tbsp fresh lemon juice (about 1 medium lemon)
  • 1 tsp lemon extract
  • 6-8 tbsp water (enough to make a thick dough)

Directions

 
  • Sift the MRM Veggie Meal and coconut flour into a bowl.
  • Add the poppy seeds and erythritol whisk until incorporated.
  • Add the wet ingredients to the bowl and mix well until the liquid is absorbed.
  • Form into 20-22 protein bites and refrigerate for 30 minutes to set.
  • Store refrigerated in an airtight container for up to a week, or freeze and enjoy them for longer!
