Lentil & Walnut Tacos

Just because I’ve adopted a vegan lifestyle, doesn’t mean my love of #TacoTuesday has gone away! This recipe turned out great- the texture and flavor of the taco “meat” is so perfect, that even when I served it to a crowd of carnivores, they didn’t hesitate a minute before devouring it. It’s also quick and easy, here’s what you need:


  •  1 cup dry lentils
  • 1 yellow onion
  • 2 gloves garlic
  • 1 cup walnuts


  • Cook lentils according to package instructions. (Cooked this should yield just under 2 cups.)
  • While the lentils are cooking, chop the onion and saute until softened. Add the garlic, cook for 1 more minute, then transfer all to a food processor. Add the walnuts. Pule the mix 5-8 times to break into smaller bites
  • When the lentils are done, add to the food processor with the black rice powder and 2 tsps of seasoning. Pulse 5 - 8 times to combine, but DON'T OVER BLEND! This will ruin the "taco meat" texture.
  • Stir in remaining seasoning and olive oil, then serve with whatever taco toppings you like. Enjoy!
