Maca Mexican Chicken Salad

This recipe is delicious, yes- but its also so dang tasty you could serve it at a restaurant and it would end up being the star of the menu! Kiddos love it, friends love it, spouses love it- what's not to love?! The maca powder gives you all the healthy vitamins and minerals that are hard to find and a taste that's as unique as it is delicious (very). Bonus: This is a great meal prep recipe! *Serves two*

Ingredients

MARINADE

SALAD

  • 1 Cooked Marinated Chicken Breast
  • 1 Head Romaine Lettuce
  • 1 Cup Pinto Beans
  • 1 Cup Black Beans
  • 1 Cup Sweet Corn
  • 1 Avocado
  • 10 Cherry Tomatoes, halved

Directions

MARINADE
  1. Combine all ingredients except chicken in a large ziplock bag and shake until combined.
  2. Put the chicken breast into the bag and seal, making sure it's fully covered in the marinade.
  3. Set the bagged chicken in the fridge for 4 hours or overnight.
  4. When ready, bake the chicken at 375°F for 16-18 minutes or until fully cooked but still tender and juicy. Allow to rest/cool for 10-15 minutes before chopping into bite-sized pieces.
SALAD
  1. Layer all ingredients in your bowl or jar.
  2. Eat and enjoy! *TIP* Add any additional seasoning or salad dressing for extra flavor!
