Mesquite Protein Pancakes
Who doesn’t love some warm delicious pancakes in the morning? They have always been a favorite of mine since I was a kid. Unfortunately I grew up with the unhealthy Bisquick pancakes, which consist of bleached wheat flour, sugar, and salt. This recipe is much healthier and tastes great. I love the mesquite powder too because it adds a nice smokey and sweet flavor to the pancakes. So if are looking for a fresh, healthy, and flavorful pancake recipe try this out!


  • 1 cup pancake mix (I used Kodiak Cake protein mix)
  • 1 cup almond milk
  • 1 egg
  • 1 tbsp MRM Organic Mesquite Superfood Powder
  • 1 tbsp peanut butter (I used Nuttzo chocolate seed butter)
  • blueberries, peaches, strawberries


  • Heat a large pan on medium heat and spray with non-stick spray.
  • Add pancake mix, egg, almond milk, and mesquite powder to a mixing bowl.
  • Use a whisk to mix until all of the contents are mixed well.
  • Use about a ¼ cup for each pancake and add to pan.
  • Once you start to see small bubbles, flip them over (about 1 ½ - 2 minutes).
  • Continue this until you have cooked all the pancakes.
  • If you want to add a peanut butter drizzle on top add 1 tbsp to a small microwaves safe dish and microwave for 15 seconds.
  • Add your pancakes to a plate, top with fruit, and add your drizzle.
