Mesquite Rubbed Shrimp Ceviche Salad
What is summer without a little seafood? Make this dish with simple ingredients, a superfood boost, minimal effort, and no intimidation. Who knew it could be this easy to make your own ceviche?! We did... and we wanted to share that with you!
1 Lb Fresh Shrimp (peeled, deveined, and chopped)
Juice of 3 Limes
4 Vine Ripe Tomatoes (deseeded and chopped)
2 Ripe Avocados (chopped)
1 Red Onion (finely chopped)
MRM Raw Organic Mesquite Superfood Powder 1 Head Romaine Lettuce
1 Small Bunch Cilantro (roughly a handful and chop)
Sea Salt (for preferred seasoning)
Mix the chopped shrimp, mesquite powder, and lime juice together in a bowl and sprinkle with a pinch of salt. Cover with cling wrap and place in the fridge for 30 minutes to cure.
While waiting for the ceviche mix the rest of the ingredients in a separate bowl.
Tear the leaves off the romaine lettuce and place on the plate to serve.
Take the shrimp ceviche out of the fridge and mix with all other ingredients. Taste for seasoning and add more salt or lime juice depending on your preference.
