Mesquite Rubbed Shrimp Ceviche Salad

What is summer without a little seafood? Make this dish with simple ingredients, a superfood boost, minimal effort, and no intimidation. Who knew it could be this easy to make your own ceviche?! We did... and we wanted to share that with you!


  • 1 Lb Fresh Shrimp (peeled, deveined, and chopped)
  • Juice of 3 Limes
  • 4 Vine Ripe Tomatoes (deseeded and chopped)
  • 2 Ripe Avocados (chopped)
  • 1 Red Onion (finely chopped)
  • 1 Tbsp MRM Raw Organic Mesquite Superfood Powder 
  • 1 Head Romaine Lettuce
  • 1 Small Bunch Cilantro (roughly a handful and chop)
  • Sea Salt (for preferred seasoning)


  • Mix the chopped shrimp, mesquite powder, and lime juice together in a bowl and sprinkle with a pinch of salt. Cover with cling wrap and place in the fridge for 30 minutes to cure.
  • While waiting for the ceviche mix the rest of the ingredients in a separate bowl.
  • Tear the leaves off the romaine lettuce and place on the plate to serve.
  • Take the shrimp ceviche out of the fridge and mix with all other ingredients. Taste for seasoning and add more salt or lime juice depending on your preference.
  • Enjoy!
