1⁄2 Large White Onion (finely chopped)
3 Cloves Garlic (Minced)
1 Stick Celery Stalk (sliced)
1 1⁄4 Lb/2.5 Cups Butternut Squash (peeled and finely sliced)
1 tsp Turmeric
1 tsp Curry Powder
1 tsp Ground Cumin
1 Tbsp MRM Raw Organic Mesquite Superfood Powder
5 Cups Vegetable Bouillon Stock
Salt and pepper
2 Tbsp Frazier Farms Extra Virgin Olive Oil
Cayenne Pepper (Optional, for Garnish)
In a medium sized pot heat the Frazier Farms Extra Virgin Olive Oil on medium heat.
Add the onion, garlic and celery to the pot and gently fry until translucent about 2-3 minutes. Do not let them turn brown.
Add the butternut squash and all of the dried spices including the MRM Raw Organic Mesquite Superfood Powder and continue to cook for 2 minutes, stirring frequently.
Add the stock to the pot, bring to a boil, then reduce heat to low and gently simmer for 10-12 minutes.
Transfer to a blender or food processor and (being careful as the soup will be steaming hot) blend on high speed for 2-3 minutes, add salt and pepper to taste.
If you so desire, add a sprinkle of cayenne to your soup and enjoy!
