Sweet potato fries, hands down one of the best appetizers on earth... at least we think so. Now we added MRM Raw Organic Mesquite Superfood Powder along with a couple of other spices to really amp up the flavor (not to mention all of the health benefits!). Pair that with an avocado garlic sauce to dip your fries in?! AH-MAZING.
1 Large Sweet Potato (washed, peeled, cut into fries – roughly 1⁄2 cm thick)
1 tsp Paprika
1 tsp MRM Raw Organic Mesquite Superfood Powder
Pinch Sea Salt
2 Tbsp Frazier Farms Extra Virgin Olive Oil
1⁄2 Cup Avocado Oil (or light olive oil as a substitute)
6 Cloves Garlic (peeled)
1⁄4 Cup Cold Water
Place the garlic cloves and 1/2 cup of avocado oil (or just enough to cover the garlic) in a very small pan. Place on a low heat and very gently cook (without browning) for about 30 minutes or until the garlic cloves are soft. Set aside to cool.
Preheat the oven to 360 ̊F.
In a large mixing bowl, add the sweet potato fries, paprika, MRM Raw Organic Mesquite Superfood Powder, pinch of sea salt, 2 Tbsp of Frazier Farms Extra Virgin Olive Oil, and mix together until evenly covered.
Place on a roasting tray (lined with parchment paper) and roast for 14-16 minutes (tossing and turning every 5 minutes) until you have a nice golden color on the fries. They should be crispy on the out side and nice and fluffy on the inside.
While the fries are cooking place the cooked garlic cloves and the flesh of 1 avocado in a blender. Add a pinch of sea salt, 1/4 cup of water and 2 Tbsp of the garlic cooking oil and blend on high until a smooth, emulsified mayo like dip forms.
