Potato and leek soup, even though it’s amazing, we thought "Why not make it better? Wait, CAN we make it better?" Answer: Of course we can, Just add superfood! The Moringa, popularly known as the "Tree of Life”, highlights the earthy flavors of the leek and potato while bringing its own vegetal flavor profile into play. This soup is rich, creamy, and delicious while boasting extra nutrients- think complete protein, calcium, potassium, and other vitamins and minerals. Enjoy!
1⁄2 Large White Onion (finely chopped)
4 Cloves Garlic (minced)
1 Large Leek (washed and finely sliced)
1 Stalk Celery (finely sliced)
6oz Washed, Peeled and Sliced Potatoes (rinsed in cold water for 5 minutes then drained)
3 1⁄2 Cups Vegetable Stock/Bouillon
1 1⁄2 Cups Low Fat Canned Coconut Cream
1 Tbsp MRM Raw Organic Moringa Superfood Powder
Salt and Pepper to Taste
Fresh Chopped Chives (Garnish- optional)
2 Tbsp Frazier Farms Extra Virgin Olive Oil
In a medium pot heat the Frazier Farms Extra Virgin Olive Oil on medium heat.
Gently fry the onion and garlic until translucent (no browning) for about 2 minutes, then add the leek and celery and continue to gently cook for another 2-3 minutes, stirring frequently.
Add the potatoes and continue to stir and cook for another 2 minutes.
Add the vegetable stock to the pot and bring to a boil. Once boiling reduce the heat to low and gently simmer for 8-10 minutes, or until the potatoes are soft.
Add the milk and bring back to a boil, boil for 2 minutes.
Transfer to a blender/food processor and (being careful as the soup will be steaming hot) blend on high for 2-3 minutes.
While blending add the MRM Raw Organic Moringa Superfood Powder and salt and pepper to taste.
