Brownies... we all want to eat them, all of the time- don't deny it! Most of us don't because, you know, health. Not to worry- these no bake superfood brownies are raw, gluten free, vegan, paleo, and taste incredible! They're made with a super sneaky, super healthy ingredient: Spirulina! The sweetness of the spirulina pairs very well with the earthiness of the unsweetened cocoa to bring you raw, decadent brownies that boast the benefits of Vitamin A and all essential amino acids. Go ahead, indulge without the bloated belly bulge!
1/3 Cup pitted medjool dates
½ Cup walnuts (raw or lightly toasted to bring out a more nutty flavor)
Pour the walnuts into a food process and process until you get a rough crumb consistency.
Add the salt, dates, cocoa, spirulina, and raspberries to the processor and pulse until the mixture becomes fully combined.
Continue to process the mixture while adding the melted coconut oil. Process until fully combined.
Remove the brownie mixture from the food processor and transfer to the lined dish. Cover with cling wrap and press the mixture to form into your desired thickness and width. Set in the fridge to set and firm for at least 35-45 minutes.
When you’re ready to enjoy the brownies remove from the fridge and garnish with some toasted walnuts, raspberries, and chocolate shavings.
These brownies will keep in the fridge for seven days, or you can freeze them for up three months and enjoy just a little bit at a time- enjoy!
