Nutty Maca Bars
1 Hour 10 Minutes
These bars are packed with a ton of healthy ingredients, but taste like they're a dessert. While the ingredient list looks daunting, these bars are super easy to make and store for up to 3 weeks in your freezer. 5 Large, Soft Dates (if not fresh and soft soak in hot water for 5-15 minutes)
1 Cup Walnuts
1 Cup Hazelnuts
1/2 Cup Raw Sunflower Seeds
1/2 Cup Raw Brazil Nuts
Pinch Sea Salt
MRM Raw Organic Maca Superfood Powder 3 Tbsp Coconut Oil (can use coconut butter)
2 Tbsp Tahini
1/4 Cup Pumpkin Seeds
1/4 Cup Raw Sesame Seeds (hulled or unhulled)
1/4 Cup Hemp Seeds
1/4 Cup Chia Seeds
1/2 Cup Goji Berries
1/2 Cup Cacao Nibs
3 Tbsp Maple Syrup
If you don’t have all of the ingredients, it’s ok- feel free to substitute different nuts and seeds! The main nuts you need are the Walnuts and Hazelnuts.
Preheat oven to 350F.
Soak dates if you need to.
Place walnuts and hazelnuts on a baking sheet and bake for 10 minutes. Remove and place in a food processor.
Add sunflower seeds, brazil nuts, and salt to the food processor. Grind until you get the consistency of bread crumbs.
Remove the pits from the dates and add to the nut mixture in the food processor along with the mac powder, coconut oil, and the tahini. Process until combined and smooth as possible.
Pour processed mixture into a large mixing bowl and add all remaining ingredients. Use your hand to knead and combine everything until the mixture is sticky and holds together.
Line an 8x8in baking pan with parchment paper- be sure to have the parchment paper extend up the sides. Press the mixture into the pan until you get a packed, even layer.
Place in the freezer for 1-2 hours to set.
Lift the mixture out with the parchment paper and set on a cutting board.
Cut the mixture into the bars with a large, sharp knife. You can store the bars in the freezer for about 3 weeks.
