Oatmeal, Raisin, & Vanilla Protein Cookies

I think it's hard to resist a good cookie, am I right? You can add protein powder to just about any baked recipe. We decided to enhance our oatmeal raisin cookies with a some vanilla whey protein! Low in sugar, carbs, and fat yet high in protein. In our eyes, "the perfect cookie."

Ingredients

  • 1 ¼ cups all purpose flour
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3/4 cup unsalted butter (cold and diced)
  • 1 cup organic light brown sugar
  • 2 scoops MRM Vanilla Whey Protein Powder
  • 2 large eggs (beaten)
  • 2 cups old fashioned oats
  • 1 cup raisins

Directions

  1. Pre heat oven to 350 degrees Fahrenheit and line a 13” baking sheet with parchment paper.
  2. In a bowl mix together the flour, cinnamon, baking powder, soda, salt, and protein powder. Mix well and set aside.
  3. Use a stand or hand mixer to beat together the butter and sugar. Mix well until fluffy, mix in egg gradually.
  4. Add the dry mix, oats, and the raisins.
  5. Scoop the dough out into 2 inch balls and lay on the baking sheet, leaving 2 finger width space in between each cookie.
  6. Bake 12-14 minutes, remove and place on a cooling rack. Transfer to a sealed container until ready to use. Enjoy!
