Pancakes with Black Berry Compote

There is no better smell than fresh pancakes in the morning! These babies are packed with protein, fiber and contain no refined sugar. The berry compote adds the perfect sweetness that will have you coming back for more. Whip these up next time you need a healthy and filling breakfast.


  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 large egg
  • ½ scoop MRM Veggie Elite vanilla bean protein powder
  • 1 small container (170g) vanilla greek yogurt
  • ¼ salt
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 cup fresh blackberries
  • 2 tsp honey


  • In a mixing bowl whisk flour, baking powder, salt, egg, protein powder, coconut oil, and vanilla extract well and set to the side.
  • Heat up a small pot and a large skillet on medium heat.
  • Add blackberries, honey, and 1 tbsp of water to the small pot and cook for 6-7 minutes.
  • While the berries are cooking, spray skillet with nonstick spray and add your pancake batter (about ¼ cup per pancake). Once you start to see some bubbles flip to the other side (about 1 minute per side)
  • Once the berries and pancakes are cooked stack them on your plate and top with yogurt and blackberry compote. Enjoy!
