Peanut Butter Banana Protein Blender Muffins
25 minutes
Sia Cooper came up with these delicious peanut butter banana protein blender muffins one night and both my son and my husband wanted seconds! There's no flour or oil in these muffins and they are filled with PROTEIN! I used MRM's Egg White protein powder for this particular recipe. I like using the egg white powder because it is so good for you and it is also a great protein powder for those who are allergic to dairy products.

Ingredients

  • 2 ripe bananas
  • 2 large eggs
  • 1/2 cup vanilla almond milk
  • 2 cups rolled oats
  • 1/4 cup MRM Egg White Protein Powder in French Vanilla
  • 3/4 cup vanilla Greek yogurt
  • 1/2 cup pure maple syrup (honey works as well)
  • 1/2 cup peanut butter
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt

Directions

  • Preheat oven to 400 degree.
  • Combine ingredients in a blender and blend until the batter is smooth.
  • Pour batter into a greased muffin tin about 3/4 of the way.
  • Bake for 15 minutes.
  • Let cool before removing from pan.
