Pumpkin Protein Pancakes

Fall is here and that means PUMPKIN!!! Since breakfast is the most important meal of the day, why not add some pumpkin to your morning meal. This batch of pancakes are the perfect way to start celebrating the season. They are simple, delicious and packed with protein. This recipe will make about 10-12 pancakes so plan on sharing with friends and family OR save them as a meal prep.



  1. In a mixing bowl add milk, pumpkin, coconut oil and egg. Mix well. Next combine the flour, protein, turmeric, coconut sugar, baking powder, cinnamon and salt. Mix all contents until  you have a smooth batter.
  2. Heat a large skillet on medium heat and apply non-stick spray.
  3. Add about 1/4 of mix per pancake, cook for about 1-2 minutes on each side and serve with syrup and nuts!
