Red Beet Bark
In the mood for a holiday treat but don't want to deal with all of the processed junk and additives that usually accompany it? We have your answer right here: Red Beet and Peppermint White Chocolate Bark. Yup. Simple ingredients, simple directions, and simply delicious. The Red Beet Powder provides some heart healthy antioxidants and a beautiful red color to give you the traditional peppermint bark look. The flavor is sweet, yet minty, making this a perfect treat for the holidays- or all year long! -Store covered in an airtight container in the freezer for up to two weeks.
1⁄2 Cup Cacao Butter
1⁄4 Cup Coconut Oil
3 Tbsp Maple Syrup
1 tsp Vanilla Extract
3-6 Drops Peppermint Oil (depending on how strong you like your peppermint)
1 Tbsp MRM
Raw Organic Red Beet Superfood Powder (optional) Goji Berries, Cacao Nibs, Cashews, for garnish
In a Double Boiler melt the cacao butter along with the coconut oil.
Mix in maple syrup, peppermint oil, and vanilla extract and whisk until combined.
In a lined 8x8 pyrex, or freezer safe, dish sprinkle the goji berries, cacao nibs, and cashews until you have your desired amount.
Pour half of the cacao mixture on top of the goji berries, etc, and place in the freezer on a level surface.
Blend the Red Beetroot Powder into the remaining half of the cacao mixture.
Pour on top of the cacao mixture in the freezer, and swirl around to get the marbled look.
Place back in the freezer to set for 1-2 hours.
Take the bark out of the dish and cut/crack into multiple pieces.
