Gazpacho is a chilled tomato soup traditionally eaten in Spain during the hot summer months as it is very cool and refreshing. We added some red beet powder to up the antioxidant level and make this healthy summer meal that much better for you!
8 Large Vine-Ripe Tomatoes, Chopped into 1/8ths
3 Garlic Cloves, Minced
1 Small Cucumber, Chopped
1 Bunch Green Onion, Chopped
1 Serrano Chili, Chopped
1 Bunch Basil, Torn
Splash Olive Oil
1 Tbsp Sea Salt
Pinch of Pepper
1/4 Cup Sherry Vinegar
2 Tbsp MRM Red Beet Superfood Powder
Mix all ingredients except the red beet powder together in a Tupperware. Cover and set in the fridge to marinate for 24 hours.
Pour Tupperware contents into a blender and add the red beet powder. Blend on high speed until smooth.
Pour over a sieve for the smoothest consistency and keep in the refrigerator until ready to serve. The Gazpacho will stay fresh for up to seven days.
