Red Beet Pancake

The perfect delicious, no-guilt, red beet pancake recipe. Our Organic Red Beet Powder is the perfect way to add fiber and antioxidant protection to your diet. So you can feel good about having that second helping. Don’t you love when eating pancakes for breakfast is the healthy option?

Ingredients

Pancake Mix

  • 2 eggs
  • 1/3 cup unsweetened vanilla almond milk (1-2 Tbsp more if needed)
  • ½ tsp treleafia
  • 1 tsp vanilla extract
  • ¼ c. whole wheat flour (for a gluten free option you could use coconut flour)
  • 1 scoop MRM strawberry Whey Protein
  • 3 Tbsp unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1.5 Tbsp MRM Organic Red Beet Powder

Topping

  • ¼ c plain Greek yogurt
  • 2 Tbsp fat free cream cheese
  • 1 tsp vanilla extract
  • 1/8 tsp treleafia (or more to taste)

Directions

  • Mix wet ingredients in a bowl. 
  • Add dry ingredients and mix together.  Use ½ cup of batter per pancake. 
  • Cook over medium high heat for 2-3 minutes until bubbles begin to form on pancake. 
  • Flip and cook another 1-2 minutes. 
  • Recipe should make three pancakes.  Layer with cream cheese topping and enjoy!
