Enjoy the taste of Salmon paired with fresh apples, tomatoes, kale, and a superfood Moringa Pesto! The earthy flavors from he pesto combined with the fresh citrus, crisp apple, and the indulgent salmon all pair perfectly to provide you with a satisfying, healthy, and delectable meal.
2- 8oz Fresh Salmon Fillets (with the skin removed)
1 Pink Lady Apple (sliced into discs for grilling)
2 Large Stalks of Kale (shredded)
6 Cherry Tomatoes (cut in half)
1 Lemon (juiced)
1/2 Cup Lemon Olive Oil, you can use regular if you don’t have any
Shiso Cress, for garnishing
Sea Salt, for seasoning
Place the potatoes in a pot with a pinch of salt and cover with water. Boil for 10-12 minutes or until cooked through. Drain potatoes and leave to stand.
Make the apple dressing by placing the diced granny smith apple in a bowl with the lemon olive oil and lemon juice. Take half of the mixture and place in a separate bowl with the cherry tomatoes, fennel, kale, and a pinch of salt. Toss to marinate the salad. Leave the other half of the dressing off to the side, you will use it for the salmon later.
Heat a sauce pan on high and add a splash of live oil. At the same time preheat the grill to high heat. Sprinkle the salmon with sea salt and reduce the pan heat to medium. Sear the salmon for 1-2 minutes and all four sides. Remove the salmon from the pan, place the potatoes in the same pan and lightly toss with the mooring pesto.
While the potatoes are warming rub the sliced apples with a splash of olive oil and place on the grill, char on each side for one minute. Remove the potatoes from the pan.
Assemble the dish by placing the potatoes and salad on the plate and top with the salmon. Drizzle the remaining dressing on top of the salmon, and enjoy!
