Roasted Tomato And Red Beet Soup

Tomato-basil soup is a classic, hands down. It's already full of nutrients from the fresh vegetables but we couldn’t resist adding some MRM Organic Red Beet Powder to the mix. The superfood powder lends a slightly sweet and earthy taste to the tomato basil soup without altering the flavor. The health benefits include the unique antioxidant Betacyanins, as well as betaine and nitrates. Enjoy this soup, perhaps with a grilled cheese, knowing that you’re doing your body and soul good.

Ingredients

  • 2 lb Fresh Tomatoes (cut into quarters)
  • 4 Tbsp Frazier Farms Extra Virgin Olive Oil
  • 1 tsp Fresh Thyme Leaves (finely chopped) – replace with dried thyme if fresh unavailable
  • 3 Shallots (roughly chopped)
  • 2 Garlic Cloves (minced)
  • 1 Celery Stalk (finely sliced)
  • 1 Small Leek (white part only – finely sliced)
  • 2 1⁄2 Cups Vegetable Bouillon
  • 6 Fresh Basil Leaves (roughly torn)
  • 1 Tbsp MRM Organic Red Beet Powder
  • 1 tsp Tomato Paste
  • Salt and Pepper to Taste

Directions

  1. Pre heat the oven to 380 ̊F
  2. Place the tomatoes into a roasting dish and drizzle with 2 Tbsp of Frazier Farms Extra Virgin Olive Oil and a pinch of salt and pepper, then put in the oven to roast for about 15 minutes.
  3. Heat a medium sized pot with 2 Tbsp of Frazier Farms Extra Virgin Olive Oil to a medium heat and add the chopped shallot, garlic, celery and leek and gently cook down (being careful not to brown) for 3-4 minutes.
  4. Add the tomato paste and thyme and continue to cook for another 2 minutes.
  5. Remove the roasting tray from the oven and tip the contents, including the excess juices, into the pot, add the vegetable stock and bring to a boil.
  6. Turn the heat down to low and gently simmer for 10-12 minutes.
  7. Transfer to a blender/food processor and blend on high speed (being careful as the soup will be very hot) for 2 minutes. While blending add the torn basil, red beet powder and check for seasoning.
