Cookie dough, we all know it's amazing but we also know we're not supposed to eat it until the dough has actually been cooked. Well... not anymore! This cookie dough is made to be eaten RAW! YAY! We made this dough with MRM Raw Organic Sacha Inchi Superfood Powder so it tastes like peanut butter and chocolate chip cookie dough- delicious and nutritious, and totally indulgent without the guilt that usually accompanies such foods.
3 Tbsp Coconut Flour
1 Tbsp Coconut Sugar
Pinch Himalayan Sea Salt
2 Tbsp MRM Raw Organic Sacha Inchi Superfood Powder
3 Tbsp Unsweetened Organic Apple Sauce
2 Tbsp Almond Butter or Nut/Seed Butter of Choice (Make sure it’s nice and drippy)
1 tsp Alcohol Free Vanilla Extract
1 Tbsp Cacao Nibs
1-2 Tbsp Preferred Vegan Chocolate Chips (we used Enjoy Life Dark Chocolate Chips)
1 Tbsp Organic Maple Syrup
*Almond Milk or Non-Dairy Milk of Choice (we used about 2 Tbsp)
Mix all dry ingredients together in a small bowl.
Mix all wet ingredients except the almond milk in a second bowl.
Combine the wet and dry ingredients in one bowl, mix until fully combined.
*Add almond milk 1 Tbsp at a time to the mixture until you reach your desired consistency (*more milk for a creamier cookie dough, less milk for a more chunky dough).
Finally, mix in your chocolate chips and cacao nibs.
Set in the fridge to set for 30 minutes to 1 hour (this is when it tastes best), although if you can't wait feel free to indulge right away- we don't blame you!
