Sacha Inchi Peanut Butter Cookies

These superfood sacha inchi peanut butter cookies will give you all the comfort food feels. Fluffy clouds of sweet peanut butter dance over your taste buds and remind you to enjoy a treat every once in a while- it's for the soul and GREAT with ice cream or coffee... or both... or jelly... or anything your heart desires! Bonus: Sacha Inchi packs a load of peanut butter flavor without the added fat calories AND provides protein, Vitamin E, and healthy omega fatty acids. Peanut butter cookies for the win! ***NOTE*** This recipe can easily be made gluten-free and vegan with flour and egg substitutes!


  • 2 Tbsp MRM Sacha Inchi Powder
  • 1/2 Cup Peanut Butter (Preferred brand)
  • 1/2 Cup Packed Brown Sugar (Can substitute coconut sugar)
  • 1 tsp Vanilla Extract
  • 2 4oz Sticks of Butter
  • 1/2 Cup Rolled Oats (GF if preferred)
  • 3/4 Cup Flour (Sub GF if preferred)
  • 2 Eggs, Beaten
  • 1/2 Cup Chocolate Chips (Optional)


  1. Preheat oven to 350°F.
  2. Combine the butter, peanut butter, sugar, and vanilla extract together until whipped and creamy.
  3. While mixing, slowly add in the eggs one at a time.
  4. Gradually add flour, oats, baking powder, sacha inchi, and a pinch of salt while continuing to mix.
  5. Add the chocolate chips (optional).
  6. Refrigerate the dough for 30 minutes.
  7. Spoon out cookies onto a prepped baking sheet and bake for 10-12 minutes.
  8. Allow to cool slightly, and enjoy!
