Sacha Inchi Superfood Seafood Salad

In the mood for something flavorful, rich, and healthy? This sacha inchi superfood seafood salad is just what you're looking for! Easy to make and naturally packed with healthy fats, vitamins, and minerals you honestly can't go wrong with this salad- the Sacha Inchi Superfood Powder lends a nutty flavor while providing complete protein, Essential Fatty Acids, and Vitamin E!

Ingredients

MARINADE

  • 1 Thumb-sized Piece of Ginger, peeled and chopped
  • 1Tbsp Garlic Paste
  • 1 Cup Fresh Cilantro
  • 1 Tbsp MRM Sacha Inchi Superfood Powder
  • 1 Cup Olive Oil
  • 1 Lemon, zest only
  • Pinch of Salt & Pepper

SALAD

  • 3 Scallops, marinated
  • 6 Fresh Shrimp, marinated
  • 1 Mango, peeled and chopped
  • 1 Avocado, peeled and chopped
  • 1 Tbsp Crumbled Feta Cheese
  • 1/4 Red Onion, peeled and finely chopped
  • 6 Cherry Tomatoes, halved

Directions

 
  1. Combine all marinade ingredients in a medium-sized bowl.
  2. Mix until fully combined.
  3. Add the shrimp and scallops to the marinade. Cover the bowl and let sit in the fridge for 30 minutes.
  4. Heat a medium sized grill pan (or grill) to high heat with a splash of olive oil.
  5. Remove the seafood from the marinade and sear on high heat for 2 minutes each side, obtaining a lovely roasted golden color.
  6. Allow to cool slightly before assembling with the salad!
  7. Top the salad with the scallops and shrimp. Enjoy!
