Sacha Inchi Thai Soup
This soup not only tastes ah-mazing, but it is brimming with incredible benefits from the MRM Raw Organic Sacha Inchi Superfood Powder. Sacha Inchi is a complete protein and contains essential fatty acids, and antioxidants. The soup has a flavor of traditional chicken soup jazzed up with the lemon grass and Sacha Inchi Powder. If you need a hardy meal to keep you cozy, this is it.
2 Lbs Chicken Thighs (de-boned, skinless and diced)
2 Tbsp Frazier Farms Extra Virgin Olive Oil
1 Tbsp Thai Red Curry Paste
2 Garlic Cloves (minced)
1 Thumb Size Piece of Ginger (peeled and finely chopped)
1⁄2 Cup Barley
1 Lemon Grass Stalk (Using the back of your knife, roughly smash to release the aroma but leave whole)
1 White Onion (sliced)
1 Stalk of Celery (roughly chop)
1 Red Pepper (sliced)
MRM Raw Organic Sacha Inchi Superfood Powder 1 tsp Fish Sauce
2 Cans Organic Coconut Milk
4 Cups Organic Chicken Broth
1 Jalapeno (sliced for garnish)
Pinch Chopped Cilantro (for garnish)
Heat a medium sized sauté pan to a high heat with Frazier Farms Extra Virgin Olive Oil.
Brown the diced chicken thighs on all sides. Add the ginger and garlic, then, stir in the curry paste and MRM Raw Organic Sacha Inchi Superfood Powder. Remove from heat.
Transfer everything from the pan to the crockpot.
Add the remaining ingredients, with the exception of the sliced jalapeño and cilantro (save those to garnish.)
Add a large pinch of sea salt, cover with the lid and gently cook for 4 hours.
Serve, garnish and enjoy!
