Lentils are one of the highest protein legumes and are super easy to prepare for a hearty, filling, plant-based dinner. Paired with Mashed Cauliflower, a crisp green salad and a whole-food starch like sweet potato, brown rice, or quinoa, this dinner will satisfy your stomach and fuel your muscles with high quality protein!
2 cups dry lentils
4 cups water
½ large onion, chopped
1 clove garlic, finely chopped
1 bell pepper, chopped
1 tbsp MRM Mesquite
1 tsp cumin
1 tsp turmeric
½ tsp paprika
Add all ingredients to a pot, stir, and bring to a boil.
Turn the heat down to low, cover, and simmer for 30-40 minutes until the lentils have thickened.
Stir occasionally to prevent sticking.
Serve warm and store refrigerated in an airtight container for up to 5 days.
