Smokey Lentil-Mesquite Dahl

Lentils are one of the highest protein legumes and are super easy to prepare for a hearty, filling, plant-based dinner. Paired with Mashed Cauliflower, a crisp green salad and a whole-food starch like sweet potato, brown rice, or quinoa, this dinner will satisfy your stomach and fuel your muscles with high quality protein!

Ingredients

  • 2 cups dry lentils
  • 4 cups water
  • ½ large onion, chopped
  • 1 clove garlic, finely chopped
  • 1 bell pepper, chopped
  • 1 tbsp MRM Mesquite
  • 1 tsp cumin
  • 1 tsp turmeric
  • ½ tsp paprika

Directions

  • Add all ingredients to a pot, stir, and bring to a boil.
  • Turn the heat down to low, cover, and simmer for 30-40 minutes until the lentils have thickened.
  • Stir occasionally to prevent sticking.
  • Serve warm and store refrigerated in an airtight container for up to 5 days.
