This ceviche is the perfect easy-to-make dish to whip up when getting ready to entertain. We used our Baobab Superfood Powder to add a healthy dash of vitamins and minerals- not to mention some delicious flavor. Serve this along side some crostini's, crackers, chips, lettuce cups... or even just as it! This is sure to be a crowd pleaser.
½ lb fresh ahi tuna (8oz)
1 avocado (sliced)
½ cup mango (chopped)
1 jalapeno (finely chopped and deseeded)
1 tbsp MRM Mesquite Powder
½ cup red onion (chopped)
1/3 cup cilantro (chopped)
1 French baguette
½ tsp salt
½ tsp pepper
½ tsp garlic powder
Preheat oven to 375°F. Slice your baguette into ¼ inch slices, drizzle a little olive oil on top and season with a little salt and pepper. Bake for 5-7 minutes.
Chop your onion, mango, cilantro, and jalapeno (remove seeds) place to the side. Dice up your tuna into small cubes and place to the side.
In a mixing bowl add tuna, onion, mango, cilantro, jalapeno, mesquite powder, salt, pepper, garlic powder, juice of 1 lime and 1 lemon, mix thoroughly.
Add a spoonful of your tuna ceviche to each crostini and a thin slice of avocado. Enjoy!
