Flautas, or fried and rolled tacos, can be made many different ways. We went the breakfast route because, well, breakfast is amazing. These are perfect for getting that crunchy fried texture and flavor without completely sabotaging your healthy eating habits. The protein will keep you full for hours, and the turmeric will help to fight off inflammation. Win-win-win!
3 Flour tortillas
1 tsp MRM Turmeric powder
¼ Cup chopped white onion
¼ Cup shredded cheddar cheese
¼ Cup chopped tomatoes
¼ Cup chopped cilantro
Salt, pepper, and olive oil to taste
Salsa and sour cream (optional)
Add a small amount of olive oil to a pan and set the stove to medium heat. Saute the chopped onion with a pinch of salt and pepper for 2 minutes.
Thoroughly whisk the eggs in a bowl then add turmeric powder and whisk until combined. Pour whisked eggs into your pan with the onions and cook until they reach your desired scrambled consistency. Remove from pan and set to the side.
Heat your tortillas in the microwave for 10 seconds to soften up. Begin to fill your tortillas with a little bit of the egg scramble, cheese, and tomatoes. Roll them up and place the folded side face down into a pan over medium heat with a little bit of warmed olive oil. Cook for a minute on each side, or until the tortillas start to brown and crisp.
Top with salsa and sour cream, or any other of your favorite garnishes. Enjoy!
