Banana bread is such a traditional comfort food, but a lof of the time it isn’t made with the healthiest ingredients. In this recipe we added spirulina powder, it adds a slightly sweet flavor and lots of nutrients via vitamins and minerals. Comfort food with a superfood boost- what more could you ask for?!
Spray a standard 9x5 loaf tin with light olive oil spray
Place the olive oil and sugars in the mixing bowl and beat until combined.
Add the eggs and mashed bananas to the bowl and beat together.
Mix the flour, spirulina, baking powder, baking soda, sea salt, and cinnamon together in a separate bowl. Gently fold this into the wet mix until incorporated. Try not to over mix as this will lead to a heavier loaf.
Add the chopped walnuts and chocolate. Fold through the mix.
Pour the batter into the greased loaf tin and place the tin in a larger deep roasting tray. Pour some water into the larger deeper roasting tray and cover with foil. This will part steam the loaf and keep it moist. Bake for 55-65 minutes. To check if its cooked pierce the center with a knife and if the blade comes out clean it is ready.
Remove from the oven and transfer to a wire rack to cool. Enjoy!
