These energy balls are SO. FREAKING. GOOD. Seriously- who would have thought that Spirulina could taste so delicious? Ok, well... we did- but still! You will love the orange zest and cocoa powder as it compliments the vegetal spirulina flavor sweetened naturally by the dates and maple syrup. What a way to keep yourself energized and ready to take on the day- these are also a great on-the-go snack when you're super busy!
Ingredients 1/4 Cup of pumpkin seeds 1/4 Cup of almonds 1/4 Cup of roasted hazelnuts (roughly chopped) 1/2 Cup of medjool dates (roughly chopped) 1tsp vanilla extract 1/4 cup of goji berries Zest of 1 Orange 1/2 tsp of ground cinnamon 2 Tbsp maple syrup 2 Tbsp coconut oil Tbsp MRM Organic Spirulina powder 2tbsp cocoa powder Small pinch of salt
Directions Place the seeds, nuts, dates, berries, cinnamon, orange zest, and vanilla extract in a blender and roughly pulse blend until the ingredients begin to stick together. Add the spirulina, pinch of salt, coconut oil, and maple syrup to the blender. Continue to blend together until everything sticks together. Place the mixture in a container and allow to chill in the fridge for 30 minutes. Pour the cocoa powder in a tray or flat dish, remove the mix from the fridge and mold into bite-size balls. Roll the balls in cocoa powder, and enjoy!
