Spirulina Lime Edamame Hummus

Traditional hummus is a quick, delicious and healthy snack packed with protein and fiber from chickpeas! For an even greater protein content, this recipe switches out chickpeas for edamame, or soybeans, and includes MRM spirulina powder, an algae that contains all essential amino acids! This is a perfect on-the-go snack to pair with veggie sticks or healthy crackers.

Ingredients

  • 1 12-ounce package frozen edamame
  • 2 cloves garlic
  • ¾ cup tahini
  • ½ cup water
  • juice from 2 limes
  • ½ cup packed fresh cilantro
  • 1 Tbsp MRM Spirulina Superfood Powder
  • ½ tsp cumin
  • ¼ tsp cayenne pepper
  • dash salt

Directions

  1. Place edamame in a pot and cover with water.
  2. Turn heat on medium and cook until tender, about 5 minutes, then drain
  3. Finely chop or puree garlic cloves and add to a food processor
  4. Add the edamame, tahini, water, lime juice, cilantro, cumin, cayenne pepper, spirulina, and salt.
  5. Blend until smooth.
  6. Serve chilled and store refrigerated for up to 5 days.
