Sun Dried Tomato and Spinach Stuffed Mushrooms

Are you in need of a quick and healthy snack? This recipe should take you no longer than 10-15 minutes. Mushrooms contain protein, vitamins, and iron plus they taste amazing when you sauté them with a little oil. We added a little Mesquite powder to add some smokey flavor and extra benefits. You can make these as a personal snack or as an appetizer for a party!

Ingredients

  • 6 button mushrooms
  • ½ cup sun dried tomatoes in oil
  • 1 large handful of spinach
  • 1 tsp MRM Mesquite Powder
  • Salt and pepper
  • Olive oil

Directions

  • Place a pan on the stove and set to medium heat.
  • Add a little olive oil, then add your sun dried tomatoes and spinach.
  • Sauté for 2 minutes, remove.
  • Add your mushrooms and mesquite powder, sauté for 2 minutes.
  • Add your filling to the mushrooms and enjoy!
