Superfood Salad with Red Beet and Balsamic Dressing

We dare you to call salad boring after you've enjoyed this masterful creation! Seriously, all of the fresh and roasted vegetables along with the red beet and balsamic dressing is just perfect for lunch, especially in the summer time. Red beet powder contains unique antioxidants that help to fight free radicals and is know for cardiovascular support. Basically, this really is a SUPER salad!

Ingredients

  • For The Salad:
  • 1/2 sweet potato (peeled, cubed and roasted until cooked)
  • 1 large cooked beet (peeled and cubed)
  • 1/2 head of kale (shredded)
  • 1 handful of baby arugula
  • 1 avocado (diced)
  • 1/2 cup fresh peas
  • 1/2 cup chopped mixed nuts
  • 2 Tbsp pumpkin seeds
  • 2 Tbsp goji berries
  • 6 asparagus spears (Peeled and cooked in salted boiling water for 2 minutes)
  • For The Dressing:
  • 1/2 shallot (finely chopped)
  • 2 Tbsp Balsamic vinegar
  • 5 Tbsp light olive oil
  • 2 Tbsp MRM Organic Red Beet Powder
  • Pinch of sea salt and cracked black pepper

Directions

  1. Make the dressing by mixing the red beet powder and balsamic vinegar together to form a paste, slow add the olive oil whilst continuously stirring, season with salt and pepper to taste.
  2. Mix all salad ingredients together and dress with dressing, enjoy!
