Sweet Potato Breakfast Bowl
1.5 Hours
This highly nutritious breakfast bowl packs an abundance of nutrients for our bodies to function optimally. Healthy omega-3 fats and fiber are found in chia seeds, and the addition of MRM Veggie Elite adds an extra boost of muscle-building protein. Complex carbohydrates from sweet potato will give you lasting energy, and berries add a small touch of sweetness with a big antioxidant punch.

  • 2 tbsp chia seeds
  • ½ cup plant based milk of choice
  • ½ scoop MRM Vanilla Veggie Elite protein
  • 1 small sweet potato
  • 1/3 cup non-dairy vanilla yogurt
  • one handful berries of choice
  • 1 tbsp nuts or seeds of choice
  • cinnamon

  1. Preheat your oven to 400F.
  2. Wash your sweet potato and poke it all over with a fork, then bake for 30-40 minutes until soft.
  3. Let the potato cool for 20 minutes.
  4. While the sweet potato cooks, make your chia pudding by combining the chia seeds, milk and protein powder in a mason jar.
  5. Let this sit at least 30 minutes to thicken.
  6. Once the potato is cooked and the chia pudding is thickened, assemble your bowl.
  7. Cut up your sweet potato into bite sized pieces, then add the chia pudding and yogurt.
  8. Top with fresh berries, nuts or seeds of choice, and a sprinkle of cinnamon!
