Three-Bean Mesquite Summer Salad
Cold salads are a perfect summer dish to serve at barbecue’s and pool parties. This salad is loaded with plant-based protein from three different types of beans, so you’ll stay full for hours! The flavor combination of sweet, crisp apple and smokey MRM Mesquite powder blends perfectly together. Make a large batch on the weekend and have an easy lunchbox meal ready all week long!

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • ½ cup chopped red bell pepper
  • ¼ cup chopped celery
  • ½ cup green onion
  • 3 tbsp apple cider vinegar
  • ½ tbsp. pure maple syrup
  • 1 tsp Dijon mustard
  • fresh cracked pepper
  • ½ cup chopped apple
  • 1 tbsp MRM Organic Mesquite Powder
  • ¼ tsp ground cloves

Directions

  • Place the beans in a large mixing bowl
  • Add the bell pepper, celery, green onion, and apple.
  • Add the apple cider vinegar, maple syrup, mustard, Mesquite and cloves
  • Mix well until the beans and veggies are coated evenly in the liquids and spices.
  • Store refrigerated in an airtight container for up to a week.
