Breakfast tacos made with superfoods?! These turmeric breakfast tacos look incredible and taste even better- did you know turmeric is full of inflammatory-fighting antioxidants? That's right- this meal is healthy and delicious!
3 Eggs, beaten
1 Tbsp MRM Organic Turmeric Superfood Powder
4 Taco Tortillas (flour, or corn for a gluten-free option)
1/3 Cup Grated Cheese of Choice
1 Chile, sliced
1/4 Cup Red Onion, chopped
1/4 Cup Cherry Tomatoes, chopped
1 Tbsp Cilantro, chopped
Salt & Pepper, to taste
1 Lime, cut into wedges
Mix the turmeric and a pinch of salt and pepper into the beaten eggs.
Heat a pan on medium heat and add a splash of olive oil. Slowly scramble the eggs.
Once cooked to your liking, fill the tortillas with an even amount of egg then top with the remaining ingredients. Finish with a squeeze of lime, and enjoy!
