Turmeric Breakfast Tacos

Who said you can't have tacos for breakfast!? No one, because everyone knows that breakfast and tacos are the best things in the universe. This recipe is simple and nutritious, it's packed with protein, vitamins, fiber, and healthy fats. We used the turmeric powder for more than the great health benefits, it provides a bold, amazing flavor that really brings the entire dish together. Hop on board, these tacos will take you on a one way trip to Flavor Town!

Ingredients

  • 3 eggs
  • 3-4 taco size tortillas (corn or flour, whichever you prefer)
  • 1/4 cup chopped white onions
  • 1/4 cup chopped green bell peppers
  • 1/4 cup sliced cherry tomatoes
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tsp MRM Turmeric powder
  • 1 small sliced avocado
  • Handful of spinach
  • Cilantro and lime for garnish
  • Salt and pepper for taste

Directions

 
  1. Heat a pan on medium heat and add a little bit of cooking oil. When the pan is hot add your onions and bell peppers. Saute for 2 minutes, then add in the tomatoes and spinach. Season with your preferred amount of salt and pepper.
  2. Crack your eggs into a small bowl or glass, whisk well. Add eggs and turmeric powder to the pan and cook your eggs until desired liking.
  3. Warm up your tortillas either in the microwave or over the stove burner. Add your egg filling to tortillas, top with cheese, avocado, fresh cilantro and a squeeze of lime. Que delicioso!
