Turmeric Egg Salad Sandwich

Kick your eggs up a notch! Adding turmeric gives them an even more vibrant yellow color and a ton of anti-inflammatory benefits. Plus, the little extra kick of flavor seriously can't be beaten. This recipe is so easy to make and so delicious, you and the whole family will be begging for it time and time again! * NOTE* This recipe makes two sandwiches, so double up if you need more... or might want seconds ;)

Ingredients

  • 4 Medium Hard Boiled Eggs, chopped or grated
  • 1 Tbsp MRM Organic Turmeric Superfood Powder
  • 2 Tbsp Mayonaisse, or preferred substitute
  • 2 Green Onions, chopped
  • 2 Red Radishes, thinly sliced
  • 1/2 Cucumber, thinly sliced
  • 4 slices bread, or preferred substitute

Directions

  1. Pour egg into a medium mixing bowl. Add the mayonnaise, turmeric, green onion, and a pinch of salt and pepper.
  2. Gently stir until fully combined.
  3. Toast your bread and top two slices with the egg salad.
  4. Top the egg salad with the sliced radishes and cucumber.
  5. Finish it off with the second piece of bread for the sandwich.
  6. Eat, and enjoy!
