Vanilla Bean Chia Pudding

MMM-chia seed pudding for the win! Chia seed pudding is a great breakfast- you can prep it all the night before and then when you wake up, it's ready to go! The beauty of chia seed pudding is that it's so easy to change the flavor to what you're craving... not in the mood for a fruity vanilla treat? Go ahead and use cacao powder and figs instead! Packed with some protein this breakfast will keep you satiated until it's time to enjoy your lunch.

  1. Combine all ingredients into a mason jar with a lid and shake well.
  2. Refrigerate for 20 minutes, stirring every 5 minutes. If making the night before for breakfast, refrigerate covered overnight.
  3. When ready to eat your chia pudding, puree the 1 cup of frozen mangoes and blend until fully combined and alternate layers of the chia pudding with the mango puree. 
  4. Enjoy!
